The SCS Food and Culture class has been studying how insects can be a healthy, protein-filled alternative to traditional protein sources. Crickets have 2 times the protein of beef per gram while containing all of the 9 essential Amino Acids the body needs. In this week's Food Lab we made Cricket-flour biscuits, Meal worm sausage rolls and chocolate "chirp" cookies. We also ate, and enjoyed, BBQ and Chili-lime crickets which, once you got passed the "ick" factor, tasted and had the texture of potato chips.
